Chocolate Chip Pancakes
This is a slightly modified version of a super simple recipe from All Recipes.
Serves: 2 - 3
- 1 1/2 cup flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon white sugar
- 1 teaspoon cinnamon (optional)
- 1 1/4 cup milk
- 1 egg
- 3 tablespoons melted butter + extra
- 2 teaspoons vanilla extract (optional)
- 1/2 cup chocolate chips
Combine flour, baking powder, salt, sugar and cinnamon into a mixing bowl. In a separate mixing bowl, combine milk, egg, butter, and vanilla extract. With both sets of ingredients thoroughly mixed, slowly incorporate the wet ingredients into the dry ingredients until batter is completely smooth. Add chocolate chips.
Melt 1 tablespoon of butter in a large skillet over medium heat. Working with 1/3 cup of batter at a time, spread evenly to 1/4 of an inch thick. Cook until bubbles release from the uncooked side. Flip and cook for another 30 - 60 seconds. Add butter as needed to prevent sticking. Using a frozen stick of butter to re-oil the skillet helps prevent overheating between cakes. Gradually reduce heat as necessary if skillet becomes too hot.
